Maybe it’s the atmosphere of the spring weather, but lately my craving for anything lemon is not subsiding. Not only are lemons great for your health, they aide in detox and keep your skin glowing! Throughout the day I am constantly drinking lemon water. Add some strawberries or mint to it – and I’m sold.
While I was browsing Williams-Sonoma the other day, they had made this key lime quick bread for their customers to sample. Who doesn’t love a store sample? Without hesitation, I immediately grabbed the lemon poppy seed quick bread to make at home! I even picked up this citrus loaf pan, because how adorable is this mini pan!
By just adding water and eggs to the mix, this recipe is simple and quick! I even added fresh lemon juice and the zest of 1 lemon to maximize the flavor! Although this lemon poppy seed quick bread calls for 1 hour of baking for a loaf, I only baked the 3 small loaves for a total of 35 minutes.
After letting the loaves cool for about 20 minutes, we were ready to eat! These loaves are the perfect gift for Mother’s Day, a sweet treat for a teacher or a loved one! We wrapped ours up for Mother’s Day!
