This past weekend we celebrated Father’s Day down at the beach here in New Jersey. With the cool breeze and warm temperatures it was the perfect way to spend the weekend, minus the extreme sunburn that took place afterwards. I knew we would be grilling burgers and hot dogs but I wanted to bring something a little different but full of flavor. I came across this summer salad and couldn’t resist. Any dish that includes fresh cilantro and lime juice, sign me up! Plus how adorable are these fun napkins?
1 cup corn
1 can black beans (drained)
1/2 red onion (chopped)
1 cup cherry tomatoes
handful of cilantro (optional)
You can refrigerate up to a day in advance (without the dressing)
Combine olive oil, fresh lime juice, and a dash of cumin.
Add the dressing immediately before serving and enjoy!
