One of my favorite cravings is a hearty pasta dish, lucky for me I’m marrying an Italian – but yet not so healthy. With that being said, I’ve been trying to avoid gluten as much as possible. I’ve tried several gluten free pastas and have yet to find one I really enjoy until I tried this Banza pasta. Whether you’re trying to avoid gluten or eat healthier, you have to try this pasta. Banza pasta is made from chickpeas and is full of protein and fiber and has some serious flavor.
A few weekends ago we went down the Jersey Shore for Father’s Day. I brought this caprese pasta salad and it was such a hit! I added in my homemade pesto, I’ll have to share the recipe soon because it’s seriously so good. I have been making it almost every weekend and we have enjoyed it on pretty much every meal throughout the past few weeks.
The recipe is so simple and quick that I’m sure I’ll be making this for multiple occasions throughout the summer. Another plus, it’s not has heavy as most pasta dishes so enjoy! I’ve been serving this dish in these pasta bowls, because well.. why not!
Combine: pasta, pesto, basil, fresh mozzarella, tomatoes and sprinkle with pine nuts
